Slow Cooker Pork Chop Cacciatore

Cacciatore refers to food prepared “hunter-style” with mushrooms, onions, tomatoes, and sometimes wine. I love this variation using pork instead of chicken!

Ingredients

  • 2 tbsp olive oil, divided

  • 6-7 boneless pork loin chops

  • 1 tbsp Worcestershire sauce

  • salt and pepper

  • 1 onion, chopped

  • 1 package / 8 oz fresh mushrooms, sliced

  • 1 green bell pepper, seeded and chopped

  • 1 red bell pepper, seeded and chopped

  • 1 zucchini, chopped

  • 4 cloves of garlic, minced

  • 1 jar / 26 oz pasta sauce (I use “Barilla Roasted Garlic”)

  • 1 can / 14.5 oz diced tomatoes

  • 2 tbsp tomato paste

  • 1/4 cup dry red wine (such as Burgundy)

  • 1 tsp salt

  • 1 tsp Italian seasoning

  • 1-2 tsp sugar

  • 1/2 tsp dried basil

  • 1/4 tsp dried oregano

  • 1/4 tsp crushed red pepper flakes

  • 1 bay leaf

  • 1 bag / 8 oz shredded mozzarella cheese

  • freshly grated parmesan cheese

  • fresh minced parsley

  • 1 lb hot cooked pasta of your choice – fettuccini, linguini, spaghetti, etc.

Directions

  • Heat 1 tbsp. olive oil in a large skillet.
  • Season pork chops lightly with salt and pepper.
  • Brown pork chops over medium-high heat, as you’re browning the chops, splash them with 1 tbsp. of Worcestershire sauce.
  • When they’re browned, transfer them to a large slow cooker.
  • In the same pan, add the other tbsp. of olive oil, and cook onion over medium heat until browned.
  • Stir in mushrooms, red and green bell peppers and zucchini, cook until these vegetables are soft.
  • Add in garlic, and cook for 1 more minute.
  • Mix in pasta sauce, diced tomatoes, tomato paste, and red wine.
  • Season with salt, Italian seasoning, sugar, dried basil, dried oregano, and crushed red pepper flakes.
  • Pour over chops in slow cooker, add bay leaf.
  • Cover and cook on low for 4-5 hours, or until chops are tender.
  • Serve pork chops and sauce over hot cooked pasta of your choice, and garnish with shredded mozzarella, freshly grated parmesan cheese, and fresh minced parsley, enjoy!
