Chicken & Bacon Casserole with Ranch Seasoned Tater Tots

I love that this yummy recipe turns the usual side dish of tater tots into a one pan, main dish casserole!

Ingredients

  • 1 tsp olive oil

  • 1 small onion, chopped

  • 1 can / 10-1/2 oz condensed cream of chicken soup

  • 1 cup sour cream

  • 1/2 cup milk

  • 1 package / 8 oz shredded Colby-Monterey Jack cheese

  • 1 package / 1 oz Hidden Valley ranch dressing and seasoning mix

  • 1/4 tsp garlic powder

  • 1/4 tsp freshly ground black pepper

  • 3 cups cooked chicken, shredded

  • 1 bag / 32 oz tater tots (I use “Ore-Ida Seasoned Tater Tots”)

  • 1/2 cup Applewood bacon, cooked and chopped

  • 1/4 cup sliced green onions

Directions

  • Heat oven to 400°f.
  • Spray a 13″ x 9″ baking dish with cooking spray.
  • In a non-stick skillet, heat oil over medium heat, cook onion in oil for 3-5 minutes, stirring occasionally (till tender).
  • In a large bowl, stir onion, condensed soup, sour cream, milk, 1 cup of cheese, 2 tbsp. of dressing mix, garlic powder, and black pepper until mixed well; stir in chicken.
  • Place half of the tater tots in a single layer on the bottom of the baking dish.
  • Spread chicken mixture on top of potatoes.
  • Sprinkle 1/4 cup bacon on the top.
  • In a large resealable plastic bag, add remaining tater tots with remaining dressing mix; seal and shake bag to coat.
  • Arrange on top of casserole.
  • Bake for 50 minutes.
  • Turn oven up to 425°f and top the casserole with remaining 1 cup of cheese, and 1/4 cup bacon.
  • Bake for 10-15 minutes, or until cheese is melted and tater tots are lightly browned.
  • Top with green onions, enjoy!

Notes

  • I buy the big canister of Hidden Valley Ranch seasoning powder, if you use that the measurement is 3 tbsp. which is equal to the 1 oz packet.
  • I like to serve this with a green salad with cucumber, tomatoes, croutons, and topped with Catalina dressing.
