Ingredients
2 cups warm water
3 tbsp coarse salt
baking sized russet potatoes, as many as desired
olive oil
coarse salt and fresh ground black pepper
Directions
- Scrub and dry potatoes.
- Lightly prick potatoes with a fork.
- Cover a rimmed baking sheet with foil and set a wire rack inside.
- Place oven rack in the center of the oven and heat to 425°f.
- In a large bowl, dissolve the 3 tbsp. of salt in warm water.
- Dip each potato in the water, making sure the entire potato is moistened.
- Place the potatoes on the prepared baking sheet and bake at 425°f for 60-90 minutes.
- If using a food thermometer, the center of the largest potato should register 205°f.
- Increase the oven temperature to 450°f.
- Remove potatoes from the oven and brush the tops and sides of the potatoes lightly with olive oil and sprinkle them with coarse salt and freshly ground black pepper.
- Place the potatoes back in the oven and bake for another 10 minutes.
- Top the potatoes with your favorite toppings and serve. Enjoy!
