These baked potatoes turn out fluffy, flavorful, and tender with seasoned, crispy skin every time!

Ingredients

  • 2 cups warm water

  • 3 tbsp coarse salt

  • baking sized russet potatoes, as many as desired

  • olive oil

  • coarse salt and fresh ground black pepper

Directions

  • Scrub and dry potatoes.
  • Lightly prick potatoes with a fork.
  • Cover a rimmed baking sheet with foil and set a wire rack inside.
  • Place oven rack in the center of the oven and heat to 425°f.
  • In a large bowl, dissolve the 3 tbsp. of salt in warm water.
  • Dip each potato in the water, making sure the entire potato is moistened.
  • Place the potatoes on the prepared baking sheet and bake at 425°f for 60-90 minutes.
  • If using a food thermometer, the center of the largest potato should register 205°f.
  • Increase the oven temperature to 450°f.
  • Remove potatoes from the oven and brush the tops and sides of the potatoes lightly with olive oil and sprinkle them with coarse salt and freshly ground black pepper.
  • Place the potatoes back in the oven and bake for another 10 minutes.
  • Top the potatoes with your favorite toppings and serve. Enjoy!
