This flavorful chicken is great to use in tacos, burritos, wraps, bowls, nachos, salads, etc. It’s fun and easy to serve for company and let everyone assemble their own creation!

Ingredients

  • 1 cup beer

  • 1/2 white onion, chopped

  • 4 cloves of garlic, peeled

  • 1-2 chipotle chili pepper (from a can of chipotle chilis with adobo sauce)

  • 3 tbsp canola oil, divided

  • 2 tbsp freshly squeezed lime juice

  • 1 tbsp adobo sauce (from a can of chipotle chilis with adobo sauce)

  • 2 tsp chili powder

  • 1-1/2 tsp ground cumin

  • 1 tsp dried oregano

  • 3/4 tsp kosher salt

  • 1/2 tsp freshly ground black pepper

  • Chef Merito Chicken Seasoning (to taste)

  • 3 lbs boneless, skinless chicken breasts

Directions

  • Combine beer, onion, garlic, chipotle chili pepper, 2 tbsp. canola oil, lime juice, adobo sauce, chili powder, cumin, oregano, salt and pepper in a blender until smooth.
  • Lightly sprinkle chicken breasts with Chef Merito Chicken Seasoning.
  • Add chicken to a gallon sized resealable freezer bag, and add marinade mixture.
  • Seal bag and turn to coat chicken well with marinade.
  • Marinate in the refrigerator overnight, turning the bag occasionally.
  • Drain the chicken from the marinade and pat dry with paper towel.
  • Brush chicken with the remaining 1 tbsp. canola oil, and season lightly with more Chef Merito Chicken Seasoning, to taste.
  • Add chicken to grill and cook, turning occasionally until chicken is completely cooked through.
  • Let cool before dicing into bite-sized pieces.

Notes

  • Can substitute boneless, skinless chicken thighs if desired.
  • I like to use this chicken for tacos with fresh pico de gallo, diced avocado, Monterey-jack cheese, and sour cream. I like to make Sour Cream Verde Crema; 1 cup sour cream, 3 tbsp. salsa verde (use your favorite, I like La Costena), 2 tbsp. freshly squeezed lime juice, 2 tsp. ranch seasoning mix. Blend together in a bowl, cover, and refrigerate until serving. Drizzle on tacos with other toppings.
  • I usually use Budweiser for the beer called for in marinade, but use your favorite. A Mexican beer like Modelo or Corona would be great too.
