One of my family’s favorite recipes for pork tenderloin! Great with mashed potatoes and broccoli!

Ingredients

  • Marinade
  • 1/2 cup olive oil

  • 1/3 cup soy sauce

  • 1/4 cup red wine vinegar

  • 1 lemon, juiced

  • 2 tbsp Worcestershire sauce

  • 2 tbsp fresh parsley, minced

  • 2 tsp dry mustard

  • 4 cloves garlic, peeled and minced

  • freshly cracked black pepper, to taste

  • Meat
  • 2 lbs pork tenderloin, silver skin removed (these usually come packaged with two pieces, about 1 lb each)

  • Pan Sauce
  • pan scrapings from pork tenderloin

  • 1/2 cup chicken broth

  • 3 tbsp pork marinade (thoroughly mixed)

  • 2 tsp butter

  • 1/2 tbsp brown sugar

Directions

  • Marinade
  • Combine all marinade ingredients, and reserve 3 tbsp. in a separate container.
  • Place the pork tenderloin and the marinade in a Ziploc bag, and let marinate at least 3-4 hours (I marinate for 24 hours.)
  • Cooking Tenderloin
  • Preheat oven to 350°f.
  • In a hot skillet over high heat, sear each side of the tenderloin until lightly brown.
  • Transfer to a baking pan and place in oven and cook for 40 minutes, or until the meat has reached 160°f with a meat thermometer.
  • Let rest for at least 5 minutes before slicing.
  • Pan Sauce
  • While pork is resting, place the skillet back on the stove over medium heat.
  • Add chicken broth and scrape up all the browned bits from the bottom of the pan.
  • Add reserved marinade and let it boil down for 3 minutes.
  • Add butter and brown sugar, and stir until both have melted.
  • Pour over sliced pork tenderloin.
