This delicious stir-fry can be used as a main dish or makes a great side dish to accompany grilled meats!

Ingredients

  • Stir-fry
  • 1 lb / 16 oz spaghetti (I like to use spaghetti rigati, but regular works fine too)

  • 1 lb uncooked large shrimp, peeled and deveined

  • 1 tbsp olive oil

  • 8 oz baby bella mushrooms, sliced

  • 1 red pepper, diced

  • 2 zucchini, diced

  • 1 bunch green onions, sliced

  • 1 carrot, peeled and grated

  • 1 tbsp chopped fresh cilantro leaves

  • 2 tsp toasted sesame seeds

  • Sauce
  • 2/3 cup reduced sodium soy sauce

  • 6 cloves garlic, minced

  • 4 tbsp brown sugar

  • 2 tbsp Sambal Oelek (ground fresh chili paste), or more to taste

  • 2 tbsp oyster sauce

  • 1 tbsp freshly grated ginger

  • 2 tsp sesame oil

Directions

  • In a small bowl, whisk together all sauce ingredients; and then set aside.
  • Bring a large pot of salted water to a boil, and cook pasta according to package directions, just to al dente. Drain well.
  • Heat olive oil in a large skillet over medium high heat.
  • Add shrimp, and three tbsp. of the sauce created in step one. Cook, stirring occasionally until pink, about 2-3 minutes.
  • Remove shrimp to a plate.
  • Stir in: mushrooms, bell pepper, zucchini, green onions, carrot to skillet.
  • Cook stirring frequently until tender, about five minutes.
  • Stir in spaghetti, shrimp, and remaining sauce mixture, and toss until well combined (about 3 minutes).
  • Garnish with cilantro and sesame seeds, enjoy!
