We enjoy this cake-like corn bread with spicy foods like chili or jambalaya.

Ingredients

  • 1-1/2 cups all-purpose flour

  • 2/3 cup granulated sugar

  • 1/2 cup yellow corn meal

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 1-1/4 cups milk

  • 2 large eggs, lightly beaten

  • 1/3 cup vegetable oil

  • 3 tbsp butter, melted

  • Serving
  • softened butter

  • honey

Directions

  • Preheat oven to 350°f.
  • Grease an 8″ x 8″ baking pan.
  • Combine flour, sugar, corn meal, baking powder, and salt in a large bowl.
  • Combine milk, eggs, vegetable oil, and butter in a medium bowl, mix well.
  • Add to flour mixture, stir just until blended.
  • Pour batter into prepared pan.
  • Bake for 40 minutes or until a wooden toothpick inserted in the center comes out clean.
  • Let cool for 5 minutes on a wire rack, serve warm.
  • Cut evenly into 9 squares.
  • Spread with butter and drizzle with honey.
