Lemon, Chicken, and Spinach with Tortellini

This light and zesty lemon pasta is a refreshing change from tomato-based sauces. All the ingredients complement each other perfectly! This is one of my favorite pasta dishes to serve in the summertime.

This light and zesty lemon pasta is a refreshing change from tomato-based sauces. All the ingredients complement each other perfectly! This is one of my favorite pasta dishes to serve in the summertime.

Ingredients

  • 1 package / 20 oz refrigerated or frozen cheese tortellini

  • 1-1/2 lbs boneless skinless chicken breasts, cut into 1-inch pieces

  • 1/2 tsp Cavender’s Greek Seasoning

  • 1/2 tsp lemon pepper seasoning

  • 2 tbsp butter

  • 1 large sweet red pepper, julienned

  • 4 garlic cloves, minced

  • 3-1/2 cups chicken broth, divided

  • 1/3 cup all-purpose flour

  • 1/2 tsp sea salt

  • 1/2 tsp fresh cracked black pepper

  • 2 lemons, zested

  • 1/2 tsp Tabasco Hot Sauce

  • 1 package / 5 oz fresh baby spinach

  • freshly shredded parmesan cheese (for serving)

  • lemon slices for garnish (optional)

Directions

  • Cook tortellini according to package directions.
  • Meanwhile, in a large skillet, melt butter, and add chicken breast.
  • Season with Greek and lemon pepper seasonings.
  • Sauté chicken until no longer pink, remove to a plate and keep warm.
  • In the same pan, cook red pepper until tender-crisp.
  • Add garlic, cook for 30 seconds.
  • Add 2 cups chicken broth, bring to a boil.
  • Combine flour, salt, pepper, and remaining 1-1/2 cups of broth until smooth.
  • Gradually stir into the pan, bring to a boil, cook and stir for 2 minutes, or until thickened.
  • Stir in chicken, lemon zest, and Tabasco.
  • Add spinach, cook until wilted.
  • Drain pasta, and toss with sauce, sprinkle each serving with parmesan cheese.
  • Garnish each bowl with a fresh slice of lemon.

Notes

  • If you would like the dish to be saucier, you can add up to another half cup of chicken broth.
  • If you would like a stronger lemon taste, you can squeeze in some fresh lemon juice when you add the spinach.
