This traditional Mexican rice is the perfect accompaniment to tacos, burritos, and more!

Ingredients

  • 1 cup uncooked long-grain rice

  • 3 tbsp vegetable oil

  • 1 small onion, chopped

  • 3/4 tsp salt

  • 1/2 tsp ground cumin

  • 1 tsp garlic powder

  • 2 cups chicken broth

  • 1/3 cup tomato sauce

  • 1/2 tsp Knorr Chicken Flavor Bouillon

  • freshly ground black pepper (to taste)

  • 1/2 tsp sugar

  • 1-2 tbsp chopped fresh cilantro

Directions

  • Place rice in a fine mesh strainer, rinse thoroughly, first in hot water, then in cold.
  • Rinse until water runs clear.
  • Drain, making sure all the water is out.
  • Heat oil in a medium saucepan over medium heat.
  • Add rice.
  • Cook, stirring constantly, until puffed and golden.
  • While rice is cooking, sprinkle with salt, cumin, and garlic powder.
  • Stir in onions and cook until translucent and tender.
  • Stir in chicken broth, tomato sauce, chicken bouillon, pepper, and sugar.
  • Bring to a boil, add cilantro.
  • Reduce heat to low, cover and simmer for 20 minutes, remove from heat.
  • Fluff with fork and replace lid.
  • Let steam for 5 minutes.
  • Fluff again with fork.
  • Serve and enjoy!

Notes

  • Make sure to use a saucepan with a tight-fitting lid.
  • Can add frozen peas and carrots for extra color and flavor.
