This outstanding chicken recipe bakes up crispy, flavorful and juicy! It is especially wonderful paired with pasta dishes.

Ingredients

  • 1 cup Italian seasoned dry breadcrumbs

  • 1/2 cup freshly grated Parmesan cheese

  • 1-1/2 tsp dry parsley flakes

  • 1-1/2 tsp garlic powder

  • 3/4 tsp garlic salt

  • 3/4 tsp freshly ground black pepper

  • 2 tbsp balsamic vinegar

  • 1 egg

  • 6 boneless, skinless chicken breasts

Directions

  • Preheat oven to 400°f.
  • Line a large baking sheet with foil and place a wire baking rack on the sheet.
  • Spray with non-stick spray.
  • In a large bowl combine breadcrumbs, Parmesan cheese, parsley, garlic powder, garlic salt, and pepper.
  • In another large bowl, whisk together the vinegar and egg.
  • Dip chicken in vinegar mixture, and then in breadcrumb mixture.
  • Place on wire baking rack.
  • If there is any vinegar mixture left, drizzle it evenly on top of the chicken.
  • Bake at 400°f for 40 minutes or until juices run clear.
  • Serve and enjoy!

Notes

  • In the picture above, I used chicken tenderloins instead of breasts and doubled the breadcrumb mixture and the vinegar mixture.
  • This recipe goes great with “Angel Pasta with Italian Dressing and Fresh Tomatoes”.
