Angel Pasta with Italian Dressing and Fresh Tomatoes

This light, summery side dish is packed full of flavor with fresh tomatoes, basil, and a balsamic dressing.

Ingredients

  • For the Dressing
  • 1/4 cup balsamic vinegar

  • 3 tbsp water

  • 1 packet Good Seasons Zesty Italian Salad Dressing & Recipe Mix

  • 1/2 cup extra virgin olive oil

  • For the Pasta
  • 1 package / 16 oz angel hair pasta

  • 6-8 ripe roma tomatoes, diced

  • 2 tsp olive oil

  • 1 small red onion, diced

  • 2 cloves garlic, minced

  • 1/4 cup fresh basil, chopped

  • 1/2 tsp crushed red pepper flakes

  • 1 pinch of salt

  • freshly ground black pepper to taste

  • 1/2 cup freshly grated Parmesan cheese

  • prepared dressing

Directions

  • For the Dressing
  • In a jar with a tight-fitting lid, add 1/4 cup balsamic vinegar, 3 tbsp water, and contents of the good seasons dressing packet.
  • Cover and shake vigorously until well blended.
  • Add 1/2 cup of olive oil, cover, shake again until well blended.
  • Refrigerate until ready to use, removing from the refrigerator 30 minutes prior to using.
  • For the Pasta
  • Bring a large pot of generously salted water to a boil.
  • Cook the pasta according to the package directions to al-dente and drain.
  • In a large skillet, sauté the onion in 2 tsp. of olive oil for 5 minutes.
  • Add in minced garlic, sauté for 1 minute more.
  • Add the diced tomatoes to the skillet with the onion and garlic, and sauté just to warm, about 3 minutes.
  • Transfer the tomato mixture into a large bowl and toss with the cooked pasta, prepared Italian dressing, basil, red pepper flakes, salt, pepper, and Parmesan.
  • Serve and enjoy!

Notes

  • This recipe goes great with “Crispy Balsamic Baked Chicken Breasts”.
