Ingredients

  • Marinade
  • 1/3 cup extra virgin olive oil

  • 1/3 cup reduced sodium soy sauce

  • 3 tbsp balsamic vinegar

  • 2 tbsp lemon juice

  • 2 tbsp brown sugar

  • 1-1/2 tbsp Worcestershire sauce

  • 1 tbsp Dijon mustard

  • 1 tbsp onion powder

  • 1 tbsp garlic powder

  • 1 tsp paprika

  • 1 tsp freshly ground black pepper

  • 1 tsp dried basil

  • 1 tsp dried dill weed

  • 1/2 tsp dried oregano

  • 1/2 tsp dried rosemary

  • 1/2 tsp ground coriander

  • 1/2 tsp red pepper flakes

  • Skewers
  • 3 lbs boneless top sirloin steak, trimmed and cut into 1-1/2 inch cubes

  • 2 red onions, cut into 1-1/2 inch chunks

  • wooden skewers, soaked in water for at least 30 minutes

  • 1 tbsp olive oil

  • 1/4 tsp salt

  • 1/4 tsp pepper

Directions

  • Whisk all of the marinade ingredients together in a large bowl, remove 1/3 cup to a separate container.
  • Cover and refrigerate the 1/3 cup of marinade.
  • Add cubed steak to a gallon-sized resealable freezer bag.
  • Add the remaining marinade to the steak, seal and turn to coat.
  • Marinate for 6 hours in the refrigerator. (No longer than 6 hours or the steak may become mushy.)
  • When ready to cook, toss the cubed onions with 2 tbsp. of reserved marinade, 1 tbsp. of olive oil, 1/4 tsp. of salt and 1/4 tsp. of pepper, toss until evenly coated.
  • Drain marinade from steak.
  • Evenly thread soaked wooden skewers with beef and red onion.
  • When threading red onions, keep three slices together so they don’t burn.
  • Grease and preheat grill to medium-high heat.
  • Grill skewers until lightly charred all over (about 3 minutes per side), basting with remaining marinade while cooking.
  • Cook until desired doneness.
  • Let rest for 5 minutes before serving.
