Cool, creamy, and tart this light and refreshing pie makes a perfect dessert on a warm summer evening.

Ingredients

Directions

  • In a large mixing bowl, beat eggs and yolk with wire whisk until combined.
  • Gradually add milk to eggs, beating until combined.
  • Add lime juice, water, food coloring, and lime zest.
  • Whisk until well mixed, pour into crust.
  • Place on baking sheet.
  • Bake at 350°f for 20 minutes or until almost set in the center.
  • Cool on a wire rack for 1 hour.
  • Refrigerate for at least 4 hours, I prefer to chill it overnight.
  • Cut into slices, serve topped with Reddi-Wip.

Notes

  • If you cannot find key limes, you can use regular Persian limes, it won’t be as tart but it will still be delicious.
  • I like to use the 10-inch pie crust instead of 9-inch because you get more crust.
