Enjoy this delicious cold pasta salad on a warm summer day! No matter what picnic or potluck you take this to, you’ll be going home with an empty bowl.

Ingredients

  • Salad
  • 1 lb tri-colored rotini pasta

  • 2 cups chopped red & green peppers

  • 2 cups grape or cherry tomatoes, halved

  • 1-1/2 cups red onions, chopped

  • 8 – 12 oz fresh mozzarella, cubed

  • 1 lb Genoa salami, cubed

  • 1/2 cup black olives, sliced

  • 1/4 – 1/2 cup parmesan cheese, grated

  • parsley, minced

  • Dressing
  • 3/4 cup extra virgin olive oil

  • 3/4 cup Pompeian red wine vinegar

  • 1/4 cup sugar

  • 1 tbsp dried oregano

  • 1/2 tsp dried basil

  • 1 tsp Lawry’s seasoned salt

  • 1 clove garlic, grated

  • 1/2 tsp pepper

Directions

  • Mix together dressing ingredients first and set aside until sugar is dissolved completely.
  • Cook pasta according to box directions just to al dente, and rinse under cold water until cool. Do not overcook.
  • Cut Genoa salami and fresh mozzarella into about 1/2 – 3/4 inch cubes.
  • Mix all chopped items together with pasta.
  • Mix dressing again with whisk. Pour in dressing and toss together.
  • Chill well.
  • You may need to add red wine vinegar or olive oil to get to desired consistency.
    Some like it more moist than others.
  • Enjoy!
