Angel Pasta with Italian Dressing and Fresh Tomatoes

Ingredients
- For the Dressing
1/4 cup balsamic vinegar
3 tbsp water
1 packet Good Seasons Zesty Italian Salad Dressing & Recipe Mix
1/2 cup extra virgin olive oil
- For the Pasta
1 package / 16 oz angel hair pasta
6-8 ripe roma tomatoes, diced
2 tsp olive oil
1 small red onion, diced
2 cloves garlic, minced
1/4 cup fresh basil, chopped
1/2 tsp crushed red pepper flakes
1 pinch of salt
freshly ground black pepper to taste
1/2 cup freshly grated Parmesan cheese

Directions
- For the Dressing
- In a jar with a tight-fitting lid, add 1/4 cup balsamic vinegar, 3 tbsp water, and contents of the good seasons dressing packet.
- Cover and shake vigorously until well blended.
- Add 1/2 cup of olive oil, cover, shake again until well blended.
- Refrigerate until ready to use, removing from the refrigerator 30 minutes prior to using.
- For the Pasta
- Bring a large pot of generously salted water to a boil.
- Cook the pasta according to the package directions to al-dente and drain.
- In a large skillet, sauté the onion in 2 tsp. of olive oil for 5 minutes.
- Add in minced garlic, sauté for 1 minute more.
- Add the diced tomatoes to the skillet with the onion and garlic, and sauté just to warm, about 3 minutes.
- Transfer the tomato mixture into a large bowl and toss with the cooked pasta, prepared Italian dressing, basil, red pepper flakes, salt, pepper, and Parmesan.
- Serve and enjoy!
