These festive chicken sandwiches are a breeze to make on a hot summer day with very little cleanup!

Ingredients

  • 1 can / 20 oz sliced pineapple in juice

  • 1 tbsp brown sugar

  • 1 tsp ground mustard

  • 1 tsp garlic salt

  • 1/2 tsp fresh ground black pepper

  • 8 boneless, skinless chicken breasts (4-5 oz. each)

  • 1 cup mayonnaise (I use Best Foods)

  • 4 tbsp Dijon mustard

  • 1 tsp dried dill weed

  • 8 romaine lettuce leaves

  • 8 slices Munster cheese

  • 8 sweet Hawaiian hamburger buns (I use Ball Park)

Directions

  • Pound out each chicken breast to a 1/4-1/2 inch thickness with the smooth side of the meat mallet.
  • Set aside in a resealable freezer bag.
  • Drain pineapple, reserving 1 cup of juice.
  • Put the pineapple slices in a container and refrigerate until grilling.
  • In a bowl, combine the reserved pineapple juice, brown sugar, ground mustard, garlic salt, and pepper, whisk well and add to the bag containing the chicken breasts.
  • Seal bag and turn to coat, refrigerate for at least 2 hours, turning occasionally.
  • In a small bowl, combine mayonnaise, Dijon mustard, and dill, refrigerate until serving.
  • Drain and discard marinade, grill the chicken, covered, over medium heat for 6 minutes on each side or until juices run clear.
  • Add one slice of cheese to each breast and grill until melted, remove to a serving plate.
  • Grill pineapple slices for one minute on each side.
  • Grill the Hawaiian buns until lightly toasted.
  • Spread mayonnaise mixture on buns, then lay a romaine lettuce leaf on each bottom bun, top with chicken breast, and a pineapple slice, enjoy!
