Any flavor smoked sausage and many different vegetables work well in these versatile kebabs!

Ingredients

  • 3/4 cup unsweetened pineapple juice

  • 1/4 cup cider vinegar

  • 1/4 cup canola oil

  • 2 tbsp brown sugar

  • 2 tbsp soy sauce

  • 1 tsp chili garlic sauce (or Sambal Oelek)

  • 1/2 tsp garlic powder

  • 1/4 tsp lemon-pepper seasoning

  • 3 lbs smoked sausage, thickly sliced (check notes)

  • 1 can / 20 oz unsweetened pineapple chunks, drained

  • 1 large green pepper, cut into 1-inch squares

  • 1 large red pepper, cut into 1-inch squares

  • 1 large red onion, cut into 1-inch squares

  • 1 pint grape tomatoes

  • 2 zucchinis, cut unto chunks

  • Lawry’s seasoned salt and fresh cracked pepper

  • wooden skewers, soaked in water for 30 minutes

  • hot cooked rice

Directions

  • In a small bowl, combine the first 8 ingredients.
  • Remove 1/2 cup for basting; cover and refrigerate.
  • Divide remaining marinade between two large resealable plastic bags.
  • Add sausage to one bag, add the pineapple and vegetables to the other bag.
  • Seal bags and turn to coat.
  • Refrigerate for 5-6 hours.
  • On the soaked wooden skewers, alternately thread the sausage, pineapple, and vegetables.
  • Sprinkle kebabs lightly with seasoned salt and fresh cracked black pepper.
  • Lightly coat the grill rack with non-stick spray.
  • Grill kebabs over medium-low heat for 15 minutes, turning frequently.
  • Baste with reserved marinade in the last 5 minutes.
  • Serve with hot cooked rice, enjoy!

Notes

  • I use Evergood Sausage. I mix it up and use 3 different flavors: pineapple, spicy mango habanero, and classic hot links. Just use whatever your favorite smoked sausage happens to be.
