Ingredients

  • 2 tbsp vegetable oil

  • 2-1/2 lbs beef stew meat

  • 1 large onion, chopped

  • 5 garlic cloves, minced

  • 1 green pepper, chopped

  • 4 med carrot, peeled and sliced

  • 1 jalapeno, seeded and minced, optional

  • 1-1/2 tsp ground cumin

  • 1 tsp dried oregano

  • 1/2 tsp smoked paprika

  • 1/2 tsp ancho chili powder

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

  • 1 bay leaf

  • 1 tbsp sugar

  • 10-1/2 oz condensed beef broth (or beef consommé), undiluted

  • 1 tsp Knorr Beef Bouillon Powder

  • 10 oz diced tomatoes with green chilies (mild), undrained

  • 2 cans – 4 oz each chopped mild green chilies

  • 1 cup beer (or water)

  • 15 oz pinto beans, rinsed and drained

  • 2-3 medium potatoes, peeled and chopped

  • 1/2 cup fresh cilantro, minced

  • Garnish
  • Monterey jack and cheddar blend, garnish

  • sour cream, garnish

  • thinly sliced fresh jalapeno (optional)

  • flour tortillas, warmed

  • salt, to taste

  • pepper, to taste

Directions

  • In a Dutch oven, heat oil over medium-high heat, brown beef on all sides.
  • Add in onions, garlic, bell pepper, carrots, and jalapeno and sauté until tender.
  • Add in cumin, oregano, smoked paprika, ancho powder, onion powder, garlic powder, bay leaf, salt and pepper.
  • Cook and stir for 2 – 3 minutes.
  • Add in sugar, beef broth, beef bouillon powder, diced tomatoes with green chiles, chopped green chiles and beer.
  • Bring to a boil, reduce heat. Cover and simmer 1-1/2 hours, stirring occasionally.
  • Next, add in the pinto beans, potatoes and cilantro. Cover and simmer another 30 minutes or until meat and potatoes are tender. If you would like a thicker stew, remove the lid at this time and keep cooking and stirring on simmer until desired consistency
  • Ladle into bowls and top with shredded cheeses, sour cream and more cilantro, and jalapenos if desired.
  • Serve with a basket of warm flour tortillas. Enjoy!
