This Philippines-inspired marinade produces tender and delicious chicken every time. I make this many times throughout the summer.

Ingredients

  • 2/3 cup sugar

  • 2/3 cup reduced-sodium soy sauce

  • 1/2 cup lemon-lime soda (do not use diet!) I recommend Sierra Mist

  • 1/2 cup freshly squeezed lemon juice

  • 2 tbsp garlic powder

  • 1 tsp freshly ground black pepper

  • 1/2 tsp salt

  • 3-4 lbs boneless, skinless chicken breast (can use bone-in breasts if you prefer)

  • 4 tbsp barbecue sauce

Directions

  • In a large bowl combine the first 7 ingredients.
  • Pour 1-1/2 cups of the marinade into a large resealable plastic bag.
  • Add the chicken.
  • Seal bag and turn to coat.
  • Refrigerate overnight.
  • Cover and refrigerate remaining marinade.
  • When ready to grill, drain and discard the marinade from the chicken.
  • Add barbecue sauce to reserved marinade.
  • Grill chicken until no longer pink, turning and basting occasionally with the reserved marinade.
  • Serve and enjoy!
