Enjoy this savory side dish with potatoes, cheese, and bacon!

Ingredients

  • 10 reg red potatoes, peeled and cut into even chunks

  • 1/2 cup buttermilk

  • 1/4 cup butter, cubed

  • 6 cloves garlic, peeled

  • 1/2 tsp pepper

  • 1/8 tsp salt

  • 6 oz shredded sharp cheddar cheese, divided

  • 1/4 cup parmesan cheese, shredded

  • 1/2 cup bacon, cooked and crumbled

  • 1 cup sour cream

  • 1 reg roma tomato, diced

  • 1 tbsp chives or green onions, sliced

Directions

  • In a Dutch oven, bring potatoes, garlic cloves, and half a tsp of salt to a boil.
  • Once boiling, reduce heat and cover.
  • Cook for 15-20 minutes or until tender.
  • Drain.
  • Mash potatoes with milk, butter, pepper, and salt.
  • Transfer to a greased 13″x 9″x 2″ baking dish and spread evenly.
  • With the end of a spoon, poke 12-16 small holes all over potatoes, and sprinkle with 1 cup cheddar cheese.
  • Dollop with sour cream then sprinkle tomatoes, chives, bacon and parmesan.
  • In a pre-heated 350°f oven, bake uncovered for 20-25 minutes or until cheese is melted.
  • Enjoy!
