This Mexican shrimp cocktail tastes best on hot summer days because it’s cold and refreshing. Plus there’s no heating up the kitchen!

Ingredients

  • 1 small white onion, diced

  • 1/4 cup freshly squeezed lime juice

  • 1 lb chilled, cooked large shrimp (31-40 count), halved, deveined, tails removed

  • 2 roma tomatoes, chopped

  • 2-3 jalapenos, seeded, finely chopped

  • 1 small celery stalk with leaves, finely chopped

  • 1 cucumber, peeled, and sliced in half length wise, seeded, and finely chopped

  • 3 cloves garlic, minced

  • 1-1/2 tsp salt

  • 1 tsp fresh ground black pepper

  • 1-1/2 cups chilled Clamato juice (I use picante)

  • 1 cup Heinz chilled ketchup

  • 1 bunch fresh cilantro, chopped

  • 2 tbsp Mexican hot sauce (such as Valentina or Tapatio)

  • 2 avocados, peeled, pitted, chopped

  • tostadas, tortilla chips, and/or saltine crackers, and extra hot sauce, for serving

Directions

  • Mix onion with lime juice in a small bowl.
  • Let stand for 10 minutes while preparing other ingredients.
  • Toss shrimp, roma tomatoes, jalapenos, celery, cucumber, garlic, salt, and pepper in a large bowl until thoroughly combined.
  • Add the onion with lime juice into the bowl with shrimp.
  • In a separate bowl, whisk Clamato juice, ketchup, and hot sauce; stir dressing into shrimp mixture.
  • Gently fold in cilantro, cover and chill thoroughly, at least 2 hours.
  • Right before serving add avocados to the bowl or, if planning on leftovers, add avocado into individual servings.
  • Serve with tostadas, tortilla chips, and/or saltine crackers, and extra hot sauce. Enjoy!

Notes

  • Sometimes I add a little bit more Clamato juice to get it to the desired consistency.
