hoursThis Philippines-inspired marinade produces tender and delicious chicken every time. I make this many times throughout the summer.
Ingredients
2/3 cup sugar
2/3 cup reduced-sodium soy sauce
1/2 cup lemon-lime soda (do not use diet!) I recommend Sierra Mist
1/2 cup freshly squeezed lemon juice
2 tbsp garlic powder
1 tsp freshly ground black pepper
1/2 tsp salt
3-4 lbs boneless, skinless chicken breast (can use bone-in breasts if you prefer)
4 tbsp barbecue sauce
Directions
- In a large bowl combine the first 7 ingredients.
- Pour 1-1/2 cups of the marinade into a large resealable plastic bag.
- Add the chicken.
- Seal bag and turn to coat.
- Refrigerate overnight.
- Cover and refrigerate remaining marinade.
- When ready to grill, drain and discard the marinade from the chicken.
- Add barbecue sauce to reserved marinade.
- Grill chicken until no longer pink, turning and basting occasionally with the reserved marinade.
- Serve and enjoy!
